
Today there was finally a hint of fall in the breeze, so when we decided to make ourselves a sweet treat, we wanted to cash in on the bounty of summer fruit at the local farmer's market before it's all gone. We decided on this super easy, throw together crumble. When the fruit is this lovely, it doesn't take much to turn it into something I'd take over chocolate any day of the week.
The best thing about this dessert is you can use any fruit and the topping gets crunchy on the top and gooey and dumpling-like in the center. It's the best of both the cobbler and crunch worlds.
Filling:
3 medium peaches
1 pint blackberries
1/2 c. vanilla-infused sugar (substitute plain sugar if you want)
1 T all purpose flour
2 t. cinnamon
1 t. salt
juice of half a lemon
Peel and slice peaches. Combine with washed berries in a large mixing bowl. Add lemon juice, sugar, flour, cinnamon and salt. Toss with your hands and set aside to let everything mingle while you make the topping.
Topping:
2/3 c. butter
1 c. flour
1/2 c. sugar
pinch salt
pinch cinnamon
With hands, combine butter, flour, sugar salt and cinnamon. Pour berry mixture into greased glass baking dish. Crumble topping evenly over berry mixture. Bake at 385 degrees for 35-40 minutes, or until fruit is bubbly and crust is golden brown.
It's good all by itself, but add ice cream or vanilla whipped cream or whatever if you're into that.
